No 80 - 2000 & 2010 Chimay Bleue (Belgium)

This was a very interesting tasting of Chimay Bleue, two bottles ten years apart. The 2000 came from my cellar and the 2010 was just bought. As you can see from the notes below I prefered the aged one, I have to buy some for later...

2000 Chimay Bleue
The nose is sweet and round with notes of dark fudge, dried fruits, christmas spicies, balsamic vinegar and licorice. Very deep and complex. Layers upon layers of different scents. Impressive!
The taste is big, soft and broad with notes of dried fruits, caramell and some spice. A long, warm finish with a great structure. Delicious! This has aged very, very well. Great!

2010 Chimay Bleue
The nose of the younger one is nice but has nowhere the depth of the older one. There is notes of white chocolate, candied orange peel and some earthy notes. Very good though.
The taste is more tight and liniar than the older one but is still very good with notes of earth, hay, milk chocolate and oranges. Very good but when compared to the 2000 this needs too be hid away for 10 years...
